I did take a picture of this meal, but decided that it looked weird and might keep you from making it. So, I posted a picture of a happy Kenadi with her food mostly gone (which is unusual for her at dinner time, so it must be good). It is Very yummy and easy to make. I love doing it when it starts to get hot because I can make it in the crock pot and keep the house cool.
Creamy Black Bean Salsa Chicken
2-4 boneless, skinless chicken breasts
1 C chicken broth
1 C salsa
1 can black beans, drained
1 can corn, drained
1 package taco seasoning
1/2 C sour cream
1 C grated cheddar cheese
Place the chicken in the bottom of a crock pot. Top with broth, salsa, beans, corn, and seasoning. Cook on high heat 3-4 hours, or low heat for 6-8hours. Shred chicken. Stir cheese and sour cream into crock pot. (I add plain yogurt also, so its a bit more creamy without the fat) Serve with/over rice (Spanish or plain), and tortillas. We eat it by scooping the rice/chicken mixture into small pieces of tortilla. It's good!

Thanks for sharing! I made it this week for our Sunday dinner (we have a really late church time so the crockpot rocks on the sabbath). It was delicious and Pete and I fought over the leftovers.
